Ingredients for the Guacamole (Por 4 hombres...): -
- 2 ripe avocados
- 2 tbsp sour cream
- Salt
- 1 lime
- Half a red onion, diced fine
- Half a roasted green pepper, peeled & diced
- Half a tomato, peeled & seeded, diced
- 1 large clove garlic
- 1 tsp fresh chilli
- Black pepper
- 2 breasts of chicken, smoked
- 4 Mexicano bagels (1 per person)
In a medium howl, mash the flesh of 2 ripe avocados with 2 large spoons of sour cream, a generous pinch of salt and the juice of a lime...fold in 1/2 red onion diced fine, 1/2 roast green pepper peeled and diced), 1/2 tomato (peeled, seeded and diced), 1 large clove of garlic (minced), a teaspoon of fresh chilli (minced) - you can use jalapeno if you like - and 5 twists of the old peppermill.
Slice 2 breasts of smoked chicken into thin pieces and slice a Mexicano bagel in half toast the bagel and its ancestors before laying on the chicken and guacamole, serve it open style with the green guacamole on top because it will all squirt out otherwise Hint: if preparing the guacamole in advance or keeping any leftovers, put one of the arocado stones back in with the guacamole to keep it green.
